the best blueberry muffins

Last summer I was on a quest to find the best blueberry muffin recipe. I love blueberry muffins, they're my favourite. I tried a few different recipes and this was definitely the best one. A couple recipes were terrible. I like a muffin that's not too dense and I like the muffin to be cake-like. This fits that description perfectly. Yummy!

Ingredients:

2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/2 cup butter, softened (not melted!)
1 cup granulated sugar
2 eggs
3/4 cup milk
1/4 tsp vanilla
1-1/2 cups fresh blueberries

Preparation:

In bowl, combine flour, baking powder and salt. In separate bowl, cream butter with sugar; beat in eggs one at a time. Gradually stir in milk (mixture may appear curdled). Add vanilla. Make a well in centre of dry ingredients; pour in liquid and stir just until moistened. Gently fold in blueberries.

Spoon into large paper-lined or well-greased muffin cups, filling to top. Bake in 375°F (190°C) oven for 25 to 30 minutes or until tops are firm to the touch.

  4. Thank-you Modern Savings!! I'm pretty sure I won't be doing any photo tutorials any time soon though. I just really like it as a hobby, but don't really get into the technical stuff.

  5. Hello...when you say a large muffin tin do you mean the jumbo size or just the regular cupcake size?

    P.S. I too love cake like sweet blueberry muffins so I am so excited to try these out!

  9. Just made these muffins for my one year old and myself.... They smell absolutely AMAZING! And like you said they have that sweet cake like flavor... I actually puréed some blueberries too, and folded into the batter, along with the cup of blueberries in the mix... They are the best muffins I've made! Thanks for the great recipe! :-)
