neapolitan pancakes

Oh my goodness, these pancakes are to.die.for! If you like neapolitan ice cream, and who doesn't, you're going to love these. They were easy to make and the kids loved them. I may have even enjoyed a few of these myself ;-) Here's the recipe:

Ingredients:

pancake mix, plus ingredients to make, or make your own favourite recipe from scratch
1 tsp vanilla extract
Strawberries, diced into small pieces
Chocolate chocolate chips

Directions:

Prepare your pancake mix according to package directions, or use your own recipe. Pour in 1 tsp vanilla extract and mix well.

Pour about 1/4 cup of batter per pancake onto a hot nonstick griddle or skillet. Top each pancake with pieces of the strawberry and chocolate chips.

Cook 2 minutes or until the tops are covered with bubbles and edges look cooked. Carefully turn pancakes over; cook 2 more minutes or until bottoms are lightly browned. Serve with maple syrup.
