
This is another one of those recipes that I've been making so long, I have no idea where I originally got the recipe from. My kids love casseroles and I love making them because they're so easy. This is a great week night meal that I can pop in the oven when I get home from work with minimal preparation and it's ready for supper. I love recipes like this. It's hard to photograph a casserole and make it look good, but trust me, this one is tasty. Here's the recipe:
Ingredients:
1 can condensed cheddar cheese soup - I use campbell's
1 can water
1 cup shredded cheddar cheese, plus additional for topping if desired
3/4 cup uncooked regular white long-grain rice
2 cups fresh broccoli florets, chopped small
4 boneless skinless chicken breasts, defrosted
salt and pepper to taste
Directions:
1. mix can of soup and 1 can water in a large bowl until there are no lumps
2. add the shredded cheese, broccoli and rece and mix well
3. place 4 boneless skinless chicken breasts in a baking dish and add your soup/rice mixture
4. sprinkle a little more shredded cheddar on top if desired and season with salt and pepper
5. cover with tin foil
6. bake at 375 F for 50 minutes or until chicken is cooked

We make this, too :) Somewhere along the line, canned tomatoes were added to our recipe.
ReplyDeleteThat used to be a staple in our dinner rotation, too, but it's almost impossible to find the cheddar soup anymore. I think the recipe is one that was on the soup can label way back when.

ReplyDeleteDo you have any Campbell's soups? If so, cream of broccoli would work. I've used it before and it has more broccoli flavour than cheese, but it's still delish. I hope that helps!
DeleteThanks for replying Jill :-) Unfortunately we don't get the Cream of broccoli either :-( We only have the Campbells Cream of Chicken, Mushroom or Tomato soups. We also have another brand's Cream of Pumpkin or Pea and Ham. Would you recommend any of these as an alternative?

Hmmm, I'm not too sure I would use any of those flavours with the broccoli. I do make a very similar one with cream of chicken soup and mixed veggie though. That one is tasty too!
