there's a worm in my apple!

Okay, so this may not be the most original idea for an April Fool's day prank (you've probably seen it a million times all over the internet), but we've all been under the weather here and originality is not my strong point right now. I'd rather be sleeping than brainstorming, lol. Regardless, this was a real winner with my kids. Not only do they already love apples, but getting a piece of candy in it was just the icing on the cake. They really weren't tricked with this cute gummy worm apple, but they did think it was hilarious and they want me to make it for the all.the.time now! This is beyond simple to make and an easy way to give your kiddos a special little trick/treat for April Fool's day today. All you have to do is poke a hole in an apple and stick a gummy worm inside. I also used my food safe markers to draw on some eyes. In my opinion, everything is always cuter with a little face on it! Happy April Fool's day everyone!

Coming up with a fun lunch for April Fool's Day was not easy. Most of the ideas out there are actually treats made to look like real food, not real food made to look like treats. Now we all know my kids eat their fair share of treats, but I needed to make a lunch for them. We already did meatloaf cupcakes last year. Plus, I didn't want to do anything too tricky, I'm not that mean and the kiddos are only 2 and 3! Then the idea came to me to serve them colored pasta. Only I didn't want to use that much food coloring. Enter beet juice. I used it to color the mashed potato frosting for the meatloaf cupcakes last year. Why couldn't I use it to color the pasta? I did and I think it's awesome. It turned the pasta a wonderful shade of pink and it didn't taste like beets at all! The kids were a little puzzled when they saw it, but they also thought it was funny. Camden even ate his whole plate, which NEVER happens. I also served them a cup of "juice." My kids never get juice so they thought that was a real treat. When they went to take a sip out of the straw, nothing came out though. I got those cute little puzzled faces again. Wait a minute, that's not juice, it's jello! That was really fun.



Now I have to work today, so my kids got their April Fool's joke a little early, but they don't know, right?

Here's how I made the lunch:

Add about a 1/4 cup of beet juice to your pot of water when boiling your pasta. I didn't want to use too much because I didn't want the pasta to taste like beets, yuck! I used the bow tie pasta because the kids love it. Boil according to box directions. The pasta will turn pink as it cooks in the pink water. When done, drain.

Toss pasta with a little butter and shredded cheese - I used a 4-cheese blend.

Cook some mixed veggies.

Place pasta on plate. Throw in some mixed veggies and use some to make a face. Add some more shredded cheese and add some extra for some hair.

Make some jello in some drinking cups and allow to set. When set, put a straw in the jello so it looks like a glass of juice.

Easy, fun, a little tricky, and healthy!

jello oranges and other April Fool's stuff

Tomorrow is April Fool's Day and I can't resist playing just a little trick on the kiddos. I have a really cute fun food friday to share for April Fool's, so you'll have to check it out tomorrow. Today I'm going to share a couple other treats you can make to trick the little ones. A friendly little trick never hurt anyone, right? I made the kids these jello oranges last week and they absolutely adored them. Kirsten was hilarious when I gave her the plate as she looked at them with a puzzled little face. She told me the oranges look "giggly." She always says giggly instead of jiggly and it cracks me up. These were really fun and simple to make and would make a great little April Fool's snack for the kids. Here's how to make them:

What you'll need:

2 oranges
orange jello

Directions:

1. slice your oranges in half lengthwise.
2. scoop out all the orange inside the peel leaving just the empty orange shell. I used the orange to make some fresh squeezed OJ!
3. prepare orange jello according to package directions
4. place the orange halves on something sturdy - I used a muffin pan so it would hold the orange halves upright.
5. pour the orange jello into the orange halves, filling to the top.
6. refrigerate until set.
7. remove from the fridge and slice the oranges in segments.
8. give to the kiddos and be prepared for some puzzled little faces!

As you can see, the kids ate them right up!



The next two things I made for the kiddos last year for April Fool's Day supper. The kids didn't love the meatloaf cupcakes, but I thought they tasted terrific.



We also had an egg sunny-side up for dessert - this was made using vanilla yogurt and half a peach.

April Fool's Day Dinner

Cupcakes for dinner? Fried eggs for dessert? Only on April Fool's Day. This was so fun to do for the kids. Kirsten helped me make the meatloaf cupcakes, so she wasn't too easily fooled. She did love the fried egg for dessert though. The "cupcakes" are actually delicious too. I'd definitely make them again. Here's the recipes:

meatloaf cupcakes with mashed potato frosting:

INGREDIENTS

For the “cupcake”:
1 lb lean ground beef
1/2 can peas and carrots
1/2 small onion, diced
3/4 cup breadcrumbs
1/3 cup milk
1/4 cup shredded parmesan
2 eggs
Salt and pepper

For the “frosting”:
1 box instant mashed potatoes (2 pouches)
Milk, per package instructions
Butter, per package instructions
Beet juice from canned beets

To garnish:
chives, finely diced

for the "cupcake":

Preheat oven to 350F.

Soak the breadcrumbs in the milk and set aside.

Mix all ingredients for the cupcake in a large bowl until an even consistency is reached.

Place meat mixture in greased muffin tins and bake until brown and shrunken away from the sides, about 20-25 minutes. Remove from tin and cool on rack.

For the “frosting”:

Prepare one sachet of instant mashed potatoes according to package instructions. To prepare the other, substitute beet juice from canned beets for the water called for in the instructions. Allow to cool.

Transfer each batch of mashed potato into a separate pastry bag (or Ziploc bag with a snipped-off corner) with your favourite pastry tip. Pipe onto cupcakes and decorate with diced chives.

You don't really need a recipe for the fried egg dessert. It's just vanilla yogurt and 1/2 canned peach. So cute and the kids loved it! Pin It
